Koki is Capella Hanoi’s Japanese dining destination, featuring the one-star Hibana by Koki and the MICHELIN-Selected Izakaya by Koki. Designed as a House of Senses, it offers a sushi bar, teppanyaki rooms, private dining, and Akio sake lounge, all led by Michelin-starred Chef Junichi Yoshida. The menus celebrate authentic Japanese craftsmanship, using the finest seasonal ingredients imported directly from Japan.


Challenge & Strategy

The ambition was to create a market-leading fine dining destination and the most authentic, ultra-luxury teppanyaki outside Japan, led by Japanese master chefs and built on the highest-quality ingredients imported directly from Japan — resulting in naturally higher food and labour costs. To preserve this uncompromising level of authenticity, we adopted a premium pricing strategy aimed at a niche, high-end segment within the Hanoi market.


Outcome

The market responded strongly: Koki achieved profitability, built a loyal following, and became the only Michelin-recognized Authentic Teppanyaki restaurant in the world, reinforcing Capella Hanoi’s status as a world-class culinary destination.
